Spinach is best purchased fresh. Try to get the large leafy variety, and avoid the one picked and washed and in a cellophane bag. The stems should be removed and discarded. It is recommended to wash it at least three times to get rid of the sand and dirt. If picked, wash, spin dry and store in a damp cloth in the refrigerator. It should keep for 3 to 4 days.
